Pumpkin Whoopie Pies Two Ways + A Free Printable

So as promised earlier this week, I'm popping by to share the results of my Pumpkin Whoopie Pie baking excursion from last Saturday. I found the recipe for these pillowy cookies over on Martha Stewart. They were originally created by the charming gents of Baked Bakery. I highly recommend both of their cookbooks (I made some buttermilk donuts from their second book with my friends earlier this month, and they were delicious).

Anyhow...I had to adapt this recipe to make it gluten free (substituting gluten free flour and gluten free vanilla to make it work). The cookies really turned out great, but I wasn't such a fan of the cream cheese filling that was part of the recipe. The truth is that it probably tasted really good, but I'm just not much of a cream cheese fan. If you are, then you should definitely try it the way the recipe was intended. However...if you're looking for something a little bit different, might I suggest my little adaptation — Pumpkin Whoopie Pies with Chai Spiked Ice Cream Filling!

Boy where they ever delicious! Too delicious! If you want to mix up your own ice cream filling you can use these basic guidelines. But by all means add more or less of any of the ingredients to suit your taste:

You will need (per 1 cookie serving):

  • 1 large scoop of fine quality vanilla ice cream, such as Haagen-Dazs
  • 1-2 teaspoons chai tea concentrate, such as Oregon Chai (I purchased mine at Whole Foods)
  • Dash of ground cinnamon
  • Dash of ground nutmeg
  • Dash of Ground cloves

Allow ice cream to soften slightly in a bowl. Mix in all ingredients and stir thoroughly until fully incorporated. Return mixture to freezer until it is solid enough to serve (around 15-30 minutes). Place chai ice cream onto the bottom side of one cookie and then top with another cookie. Press together lightly until ice cream begins to show around the edges. Eat and enjoy!

And of course everything is better with fun packaging, so I made some little tags up that you can use if you'll be serving these at a harvest party or bake sale in the coming months. There is one sheet of tags and two different wording options to choose from: "Pumpkin Whoopie Pies" and "Enjoy."

To make the tags for your whoopie pies:

  • Download printable dessert tags (download will begin immediately)
  • Print onto cardstock with a color printer
  • Follow the directions found on the printable to complete

Oh. My. God. This post just made me so happy that it's fall, which is not normal for me. Reminded me that fall means everything pumpkin, and oh how I love everything pumpkin! Yum Yum... I should really break out my baking sheets and get cooking because this is just too delicious looking to resist.

Oh my gosh, Ez, these look so delicious! I have got to try making them with that ice cream filling. I love cream cheese, but I think it'd be awesome with warm cookies and an ice cream filling.

OH, and making a thicker buttercream-type frosting for the filling is pretty tasty, too. I did that once when I made chocolate whoopie pies.

I love the twist you did with the ice cream filling instead of cream cheese. If it's not on a bagel I usually opt out with anything containing too much cream cheese. Now I need to head out to the groceries to stock up on these ingredients and make some whoopie pies!
